Learning the tricks of the trade of the Napa Valley culinary and wine scene is any food and wine connoisseur’s dream. But if your time in the valley is limited, mastering the ins and outs of the local cuisine can be daunting. St. Helena is home to the Culinary Institute of America’s Greystone campus, a sprawling education center offering tastings, food and wine enthusiast courses, restaurants, and a culinary marketplace. And the best part for wine country visitors? The CIA offers Boot Camps, comprehensive culinary classes lasting only two to five days.

Designed to accommodate all levels of expertise, a CIA Boot Camp is for anyone who has a passion for food and a willingness to learn. In the same kitchens where the CIA’s world-famous graduates got their start, you’ll be guided by some of the best instructors in the business. Forever shape the way you look at food and wine with hands-on sustainable farm-to-table cooking.

Class schedules are out for the 2018 season, and signups have begun! Try your hand at a two-day Boot Camp like Learn the Language of [Wine] Tasting or the Grilling and BBQ course. Grill the perfect steak, learn how to smoke seafood, meat, poultry, and vegetables. Prepare traditional BBQ side dishes like potato salad and macaroni and cheese. Wield tools of the grill and learn how to make brines, rubs, marinades, and sauces.

Try the Artisan Breads Boot Camp, where you can uncover the mysteries of pre-ferments and sours, while perfecting your French baguettes and Middle Eastern flatbreads. For a more introductory course, the three-day Best of Boot Camp teaches knife cuts, kitchen terminology, and covers cooking methods such as roasting, grilling, sautéing, braising, poaching, and steaming. Explore the diverse flavor profiles of Italian cuisine and casual American and French-style bistro cooking and baking.
